Such a simple recipe, I believe, should be in any cookbook. Because he offers to cook a great snack – eggplant with cheese. You can serve this to any alcoholic beverages, as well as just for a festive table. Eggplants are very tender and very tasty.
Cut eggplant into circles no thicker than one centimeter wide. Now you need to put them in a separate bowl, sprinkle with salt and let them stand for about half an hour. Eggplants will begin to secrete bitter juice, which then needs to be drained. This will help improve the taste of eggplant.
Rinse the eggplants under running water and let the water drain.
Cut tomatoes into circles, and chop garlic. Grate the cheese on a grater (fine).
Now rub each eggplant circle with chopped garlic and put it on a baking sheet greased with vegetable oil.
Put all the remaining garlic on top of the eggplant, if there are any.
Put tomato mugs on eggplant mugs.
Add salt and pepper.
Sprinkle grated cheese on top. And put the baking sheet in the oven, warmed up to one hundred and eighty degrees. Eggplant with cheese should stand in the oven for about half an hour.
When the eggplants are baked, take them out and sprinkle with chopped fresh herbs.
