Step-by-step cooking
Step 1:
In a deep bowl, sift the flour and pour in the high-speed yeast. Mix it up.
Step 2:
In a saucepan, heat the milk mixed with salt and sugar to a warm state. Pour it into the flour, add the melted butter and egg yolk. You can add a whole egg, but with one yolk (without protein), the dough will turn out more tender.
Step 3:
For kneading the dough, I used a mixer with nozzles in the form of spirals - they are just designed for such cases. The dough is not kneaded at the first speed until it gathers into one lump.
Step 4:
We shift it to the work surface, which, if necessary, can be lightly sprinkled with flour, and knead with our hands for 7 minutes. The dough turns out to be soft, pliable and does not stick to your hands.
Step 5:
Form a ball, put it in a bowl and cover with cling film and let it come up in a warm place for 1 hour.
Step 6:
Crumble the dough that has come up and put it on the table.
Step 7:
Divide the dough into 8 equal pieces, roll them into balls, cover with cling film and leave for proofing for 10 minutes.
Step 8:
Next, we cut out 8 squares from the parchment. We lubricate each with vegetable oil. We take one ball at a time and make a hole in the very center with our hands. We spread the blanks on parchment and let them rise for another 20 minutes. They also need to be covered with cling film so that they do not wind up. This method helps to keep the shape of donuts and prevents them from deforming when placed in oil.
Step 9:
Next, we look at how to deep-fry donuts. To do this, pour refined vegetable oil into a frying pan with high sides (or other suitable dishes), heat it over medium heat, but not to a boil. We take the donut together with the parchment, bring it to the very edge of the dishes, carefully remove it and put it in oil. We make a moderate fire so that the donuts simmer slightly. Fry on one side until brown - this is about 1 minute.
Step 10:
Turn over to the other side and fry for about the same amount of time. Ready-made donuts are transferred to a napkin to absorb excess fat. Still hot, they can be sprinkled with powdered sugar.
Among all the donut recipes, I liked this one the most, as it is as simple as possible. You can sprinkle doughnuts with powdered sugar, or you can just dip them in jam and drink a hot drink like tea or coffee.
