Step 1:
How to make hot smoked pork? Take good fresh meat. Rinse in running water and dry. Then cut into medium-sized pieces.

Cover the meat with salt, pepper, spices. Add the broken bay leaf.

Chop the peeled and washed onion coarsely and remember a little with your hands.
Step 4:
Add the onion to the meat and mix everything well. Cover the bowl with a lid and put it to marinate for a long time - from 10 to 24 hours .
Step 5:
After a while, rinse the meat.
Step 6:
Then fill with water, bring to a boil and boil for 20 minutes.
Step 7:
Remove the boiled meat from the water and spread it freely so that it dries. Then stuff with garlic cloves.
Step 8:
For smoking, put the meat on the grill of the smokehouse. We decided to smoke the mushrooms as well. Therefore, I had to put everything on foil so that they would not fall through. If you don't experiment like that, then there is no need for foil. At the bottom of the smokehouse, pour a little sawdust for smoking. Put a grill with meat and cook on fire for 50-60 minutes. Open the finished meat, pull it out of the smokehouse and you can immediately help yourself. Bon appetit!
