Cooking method
We start cooking this delicious and very simple soup by carefully washing the vegetables. After the potatoes and carrots are peeled with a knife. Potatoes are cut into medium-sized cubes, and carrots are cut into circles. If the carrot is large, you can cut each circle in half or even into quarters.
Peel the onion from the husk and leave it whole. My parsley and spread it on a clean and dry towel to dry. Open the jar with canned saury and cut the fish into small pieces. Oil will also be useful to us in the future.
Next, pour the specified amount of water into a saucepan of a suitable size and put it on a high heat. Bring the water to a boil. We put the prepared potatoes, carrots and onion in a saucepan. Reduce the heat to medium and cook the vegetables until tender (about 15-20 minutes).
When the potatoes and carrots become soft, put pieces of saury in a saucepan, pour the oil out of the jar. We also add butter and spices suitable for fish to the future soup. Chop the parsley finely and also put it in a saucepan. Salt, taste, adjust if necessary. A few sprigs of parsley can be left to decorate the finished soup.
Reduce the heating to a minimum and let the soup cook for literally 2-3 minutes. Then turn off the heat, cover the pan with a lid and leave the soup to stand in this form for 5-10 minutes, infuse. It is not necessary to do this and you can immediately serve the dish on the table if there is no time and desire to wait. But if the soup stands a little, it will become even more fragrant, and its taste is more saturated.
Everything is ready! We serve the soup in serving plates, decorate with parsley left for this purpose. You can also serve slices of fresh bread or crispy croutons of white bread to the soup.
Bon appetit!
