Homemade Oat Kvass
A healthy, tasty drink that quenches thirst beautifully! A very wholesome drink you can make at home with no fuss. In summer it slakes your thirst, and unlike dubious store-bought sodas full of dyes, it actually does your body good and supports your health!

Step 1:
To make oat kvass at home, you'll need whole-grain oats, of course. They can be either hulled or unhulled — mine are hulled.

You'll also need sugar and drinking water.

Rinse the oats well under running water to wash away any debris.

Then pour them into a bottle. I used a 2-liter one; for that volume, add 3–4 tablespoons of sugar.

Pour in 2 liters of drinking water. The water affects the flavor of the kvass, so it's best not to use boiled tap water — filtered drinking water works better. Cover with cheesecloth and set it somewhere out of direct sunlight. Leave it to ferment for 3–5 days.

On day 4–5, while it's fermenting actively, pour off all the liquid — we won't drink this batch. The oats that remain are the starter for our future kvass.

Pour another 2 liters of drinking water over the fermented oats. Add 3–4 tablespoons of sugar and stir well. Cover with cheesecloth and set it back out of direct sunlight; after a day the kvass is ready to drink. Pour it off and refrigerate it, then add fresh water and sugar to the oats again.
- Finished kvass keeps in the fridge for no more than 2 days; after that it over-sours and can turn slightly bitter. The starter will keep working for another 2–3 months, so you can supply yourself with this tasty, healthy thirst-quencher all summer long. You can use honey instead of sugar — it's even better for you, and you can alternate honey and sugar in the same starter each time you add fresh water. If you use sugar, add a small handful of raisins for color; with honey, nothing else is needed. The amount of oats affects how fast the kvass matures — the less oats, the longer it takes — so you can tune the batch size to how much you actually drink. Oat kvass cleanses the kidneys and liver and even helps rejuvenate the skin. So enjoy oat kvass regularly and stay healthy!
