Birch sap kvass with dried fruits

A very healthy and refreshing drink. Cook by yourself! Birch sap has since ancient times been considered a valuable drink rich in vitamins and trace elements. Not everyone likes to drink juice in its pure form, so I want to offer a recipe for kvass based on birch sap and dried fruits, which significantly improve the taste of the drink and give a pleasant aroma.

Cooking method

Cooking time: 14 d 20 min

1. Dried fruits (you can take any, but pears and prunes in equal proportions are preferable) do not need to be soaked - it is enough to rinse them thoroughly.

2. Put the washed dried fruits in a clean three-liter jar and fill them with birch juice to the brim.

3. Cover the jar with gauze, folding it in two layers. Alternatively, you can close the plastic lid by making ventilation in it (pierce a couple of holes with a hot awl) in order for air to escape.

4. Leave the jar in a warm place so that direct sunlight does not fall on it. Kvass will be ready in about 9-14 days, it all depends on the temperature in the room: the warmer, the faster the process will go.

5. Strain the finished kvass, bottle it and use it for health!
