Cooking method
Gooseberry and cherry berries should be ripe and without any damaged areas. Otherwise, the compote may sour, ferment, or its taste will turn out with bitterness or an extraneous undesirable taste. First of all, it is necessary to select the unspoiled berries for compote, rinse them well with cool water from possible dusty plaque and dry them by spreading on a towel.
Using special kitchen scissors, cut off the tails on the tips of gooseberries.
Break the cherry in half and pull the bones out of it. Try to do this as carefully as possible so that a lot of juice does not flow out.
Prepare a container for compote. To store it for a year, the glass container must be well rinsed with water with baking soda, and then sterilized over steam for a couple of minutes. It is advisable to boil the lids for 5 minutes.
Put the prepared gooseberries and cherries in a clean and dry jar.
Boil water separately in a saucepan and pour it over the berries in a jar. Cover with a clean boiled lid and leave in this position for about 10 minutes. During this time, the water in the jar of the cherry tree will turn reddish.
After the specified time, carefully, so as not to get burned, drain the water from the jar back into the pan. To make this process easier for yourself, you can use a special lid with holes - these are sold in household goods stores or you can easily make them yourself.
Put sugar in a jar with gooseberries and cherries. Here you can vary the amount of sugar depending on your preferences. If you like sweet compote, then put more.
Bring the water drained from the jar to a boil again and pour it into a jar with berries and sugar. If you plan to roll up the compote, then immediately close the lid and turn it upside down. Wrap up with a blanket and leave to cool completely. Then move it to a dark, cool place for storage throughout the year.
