- Only the young shoots of bracken fern are used in cooking — they're the most tender, with a flavor reminiscent of wild mushrooms. Bracken is gathered in spring over a fairly short window of just 3–4 weeks. Since the young shoots spoil quickly, they're packed in a large amount of salt so the fern can be enjoyed year-round. You can buy salted fern at the market or in stores, or salt it yourself. The key to using it is to soak the stems well in plenty of water — this draws out the excess salt left from curing. Start by soaking the fern shoots in water, changing the water several times for fresh. Let the stems soak overnight, then drain off the salty water and spread the fern on a paper towel to dry. Clean the stems thoroughly and cut them into pieces about 2 inches (5 cm) long, then put them in a bowl. Peel, rinse, and mince the garlic with a grater or a garlic press. In a separate bowl, combine the minced garlic, soy sauce, and sesame oil. Add the salt and pepper, mix well, and pour the mixture over the fern. Heat a wok and, without adding any oil, tip in the fern. Over high heat, stir-fry the marinated fern continuously for 5 minutes. Add a splash of water to the wok, reduce the heat to medium, cover, and cook the fern for another 10 minutes — this softens the stems and makes them more tender. Uncover so the remaining liquid can cook off. Once the wok is dry, remove it from the heat. Transfer the stir-fried fern to a nice serving dish, garnish with black (or regular) sesame seeds, and serve. Enjoy!
