  • Put the cherries in a bowl and sprinkle the sugar over them. Let them sit for about an hour to release their juice—if you're using store-bought frozen berries, this also gives them time to thaw. Then pour off the juice into a separate bowl. Heat a pot of water until it boils, drop in the cherries, and let them cook for 10 minutes. Meanwhile, dissolve the powdered starch in a small cup of cool water. When the time is up, stir the starch mixture and the cherry juice into the pot. Wait until it just starts to bubble, then take your kissel off the heat. You'll love the taste and aroma—just let it cool a bit before serving.
