Step-by-step cooking
Step 1:
Prepare the ingredients according to the list. All the ingredients are almost ready to use for cooking. Only chicken eggs take time to cook, boil them hard-boiled in salted water. Cook for about 12 minutes, drain the water, pour the eggs with cold water, let cool, clean and grate them or finely chop with a knife.
Step 2:
Hard cheese can be used of any variety according to taste and availability, but it is better to take the usual classic without various flavorings that can overshadow the taste of other ingredients, the main thing is that it melts well when heated. Grate the hard cheese on a grater.
Step 3:
Wash the green onions, dry them with paper towels and chop them with a knife. In addition to onions, you can use other greens, it will make the taste more intense and give a pleasant aroma to the snack, you can add a small bunch of dill, parsley, a sprig of basil and cilantro. The greens are washed and finely chopped with a knife.
Step 4:
Put the cooked ingredients in a deep bowl, add mayonnaise and sour cream, mix thoroughly.
Step 5:
To taste, you can add a pinch of salt and ground black pepper. Mix thoroughly so that the filling becomes homogeneous in consistency.
Step 6:
We unfold the Armenian thin lavash, cut it into identical squares or rectangles of small size. In the center of each piece of lavash, we spread a little filling with a tablespoon and fold the lavash into an envelope. This should be done carefully, so that it does not turn around when frying, and the cheese does not leak to the bottom of the pan. If the pita bread seems dry, it may crack at the folds when folded, it can be smeared with mayonnaise so that it becomes a little elastic.
Step 7:
Pour vegetable oil into the pan, heat it up. We put envelopes of pita bread on the heated oil. Fry them for five minutes on both sides, so that the cheese inside begins to melt, and the pita bread on top is slightly browned.
Step 8:
Remove the appetizer from the pan and serve it to the table hot. Bon appetit!
