Pan-Fried Lavash with Cheese

A simple, tasty appetizer for the holiday table and everyday snacking alike. This dish takes little effort, few ingredients, and no time at all, yet it works both as a hearty snack and a party appetizer. It comes out filling and seriously delicious.

    Get the ingredients ready. Almost everything is ready to use as is — only the eggs need cooking. Hard-boil them in salted water for about 12 minutes, drain, cover with cold water, and let cool. Peel them and grate them or chop them finely.

    You can use any hard cheese you like and have on hand, but a plain classic one — without added flavorings that might overpower the other ingredients — is best; the main thing is that it melts well. Grate the hard cheese.

    Wash the green onion, pat it dry with paper towels, and chop it finely. Besides the onion, you can add other fresh herbs to deepen the flavor and lend a pleasant aroma — a small bunch of dill or parsley, a sprig of basil, some cilantro. Wash and finely chop them.

    Put the prepared ingredients in a deep bowl, add the mayonnaise and sour cream, and mix thoroughly.

    Season with a pinch of salt and ground black pepper to taste. Mix well until the filling is even in consistency.

    Unroll the thin Armenian lavash and cut it into equal squares or small rectangles. Spoon a little filling into the center of each piece and fold the lavash into an envelope. Do this carefully so it doesn't come open during frying and let the cheese leak into the pan. If the lavash seems dry and might crack at the folds, brush it with a little mayonnaise to make it more pliable.

    Pour vegetable oil into a skillet and heat it up. Lay the lavash envelopes into the hot oil and fry them for five minutes per side, until the cheese inside starts to melt and the lavash browns lightly on top.
