Bone-In Pork Chops in a Simple Marinade
Meat in a simple but impressive marinade — extraordinarily good. These bone-in pork chops rely on an easy, budget-friendly set of extra ingredients. Thanks to the sparkling water, tomato, and lemon juice in the marinade, the meat comes out incredibly tender and juicy!
Cooking method
-
Step 1:
How do you make bone-in pork chops? It's very simple. Start by gathering the ingredients on the list. For this dish you'll need two bone-in pork loin chops. Trim off any excess fat if you like, and feel free to adjust the spices to taste.
-
Step 2:
First, make the marinade. Wash and dry the lemon, then cut it into medium slices.
-
Step 3:
Wash the tomato and cut it into small pieces. Use a softer, ripe tomato so you can mash it easily by hand.
-
Step 4:
Put the tomato and lemon slices in a bowl and crush them with your hands to release their juice.
-
Step 5:
Add the paprika, garlic powder, salt, and pepper, and stir.
-
Step 6:
Pour in the sparkling water and stir again.
-
Step 7:
Submerge the pork in the marinade and leave it at room temperature for 1 hour — the marinade should cover the meat completely. You can extend the marinating time to 1½ hours; if you leave it longer than that, move the bowl to the refrigerator.
-
Step 8:
Lift the pork chops out of the marinade and brush off any bits of lemon and tomato, or they'll burn in the pan.
-
Step 9:
Heat the vegetable oil in a skillet over high heat. Sear the marinated chops for 3–4 minutes per side until golden brown — this seals in all the juices.
-
Step 10:
Transfer the seared pork to a foil-lined baking sheet and drizzle the leftover oil from the skillet over the top. Roast in an oven preheated to 425°F (220°C) for 15 minutes. Enjoy!
- Every oil has a smoke point — the temperature at which it starts to burn and form harmful compounds. Pick an oil with a high smoke point for high-heat searing.
- Keep in mind that ovens vary. The temperature and cooking time may differ from what's listed, so watch your food and adjust as needed.
- Instead of a regular skillet, you can use a grill pan to give the meat attractive grill marks.
