Chicken Chakhokhbili in a Slow Cooker

    How do you make chicken chakhokhbili in a slow cooker? Prep the ingredients. If you're feeding a big family, it's best to use a whole chicken. Cut the chicken into large, bone-in serving pieces and remove the skin. Rinse the meat well and pat it dry with paper towels.

    Authentic Georgian chakhokhbili calls for only fresh vegetables, so don't substitute tomato paste. You can, however, blend the tomatoes into a purée to make the cooking easier — it won't hurt the flavor. Wash the tomatoes, and if the skins are thick, blanch them with boiling water and peel them. Cut out the stem core and chop the tomatoes into pieces.

    Blend the tomato flesh in a blender.

    Peel the onion and cut it into half-rings.

    Wash and peel the carrot, then grate it on the medium holes of a box grater or cut it into thin strips.

    Wash the bell pepper and remove the stem and seeds. Cut the flesh into strips or cubes.

    Peel the garlic cloves and mince them finely with a knife. Rinse the fresh herbs under running water, pat dry with paper towels, and chop finely.

    Pour a tablespoon of vegetable oil into the slow cooker insert. Set it to the "Sauté" program for 10 minutes. If your model doesn't have that setting, use "Bake," "Multi-cook," or any program that lets you fry. Once the oil is hot, add the chicken.

    Cook the chicken with the lid open, stirring constantly with a silicone or wooden spatula so the meat doesn't stick to the bottom.

    Then season with ground black pepper and salt, add the blended tomatoes, and stir. Switch the slow cooker to the "Stew" program for 30 minutes and put the lid on.

    After 25 minutes of stewing, open the slow cooker and add the garlic and chopped fresh herbs. Stir, cover, and leave it until the timer beeps. The dish is ready. Let it rest in the slow cooker for about another 5 minutes, then serve. Enjoy!
