Skillet Rice with Ground Meat and Sour Cream
Super quick, super easy, super tasty — a weeknight dinner for the whole family. This rice with ground meat and sour cream comes together in a flash, which makes it the perfect fast lunch or dinner. And you don't have to shop ahead — you'll almost always have everything you need already in the kitchen.

Step 1:
How do you make rice with ground meat and sour cream? Gather everything you'll need. Use any kind of ground meat you like — I'm going with ground pork. Reach for long-grain rice; it won't turn mushy the way short-grain does. The sour cream can be any fat content.

Step 2:
Peel the onion and carrot and rinse them clean under running water. Grate the carrot and finely chop the onion.

Step 3:
Heat a skillet until hot and add a little vegetable oil. Add the chopped onion and carrot and sauté, stirring, for 2–3 minutes.

Add the ground meat and stir it into the vegetables. Fry everything together for another 5–6 minutes.

Rinse the rice several times in cold water, drain it, and add it to the skillet. Stir it into the meat.

Pour in hot water and season with a little salt and spices to taste. Why hot water? It keeps the meat from hitting a sudden temperature drop that would toughen it up — and it cooks faster, too. Cover the skillet and simmer over low heat until the rice is tender. It should turn soft in about 15–20 minutes.

Step 7:
Near the end of cooking, add the sour cream and spread it evenly over the surface of the rice. Cover again and leave on the stove for another 2–3 minutes.

Your rice with ground meat and sour cream is ready! Stir, spoon onto plates, and serve.

- To keep your eyes from stinging while you chop onions, rinse the onion and the knife with cold water. Your cutting board won't hold onto the oniony smell if you rub it with a lemon wedge first.
