  • Rinse the eggs, crack them one at a time into a medium bowl, and beat with a mixer or a whisk until smooth. Season with a little salt, ground black pepper, and any dry spices you like — a pinch of Italian herbs or plain oregano, a little marjoram and thyme, or, for a bolder flavor, some paprika, chili powder, or garlic powder. Set a skillet over medium heat and add half of the oil. Pour in the beaten eggs and cook, stirring constantly with a silicone spatula so no runny spots remain. Slide the scrambled eggs into a bowl. Rinse the herbs under cold running water and pat them dry on a paper towel — parsley, dill, green onion, spinach, or whatever you have on hand all work well. Trim off the stems, finely chop the leaves, and stir them into the eggs. A standard pack of thin lavash usually holds two large sheets; cut each sheet in half to make 4 pieces. Lay one piece on a cutting board, spoon a quarter of the egg-and-herb filling into the center, and roll it up tightly. Repeat with the remaining 3 pieces. Add the rest of the oil to the skillet and heat it. Carefully add two rolls at a time, seam side down, and fry over medium heat until golden and crisp on the bottom, then flip and crisp the other side. Transfer to a plate and fry the last two rolls. Serve the crisp, golden lavash rolls hot — they're delicious! Enjoy!
