Braised Cabbage with Turkey
Fragrant cabbage braised with turkey. Cabbage stewed with meat is a full meal on its own — you don't even need to add anything else; everyone will be full and happy. Braised turkey always comes out tender and delicious, and cabbage and turkey together — once the cabbage soaks up the meaty juices — is doubly good. Every family makes a version of this, and kids love it too.

- Gather the ingredients. You can use bone-in turkey thigh — cut the meat off and use the rest to make a soup broth. Use medium carrots and onion; I used a small head of cabbage too. You can swap the tomato paste for tomato sauce, ketchup, or canned tomatoes in juice, and adjust the spices to your taste. Rinse the turkey thigh under running water and pat it dry. Cut it into pieces, large or small — turkey cooks fairly quickly, so the size is up to you. Set a heavy-bottomed pan (a sauté pan or skillet) over the heat, warm the oil, and add the turkey. Cook for a couple of minutes, stirring constantly, so it browns on all sides. Wash, peel, and coarsely grate the carrot. Peel and finely chop the onion and garlic. Add the vegetables to the meat and cook for a few minutes, stirring constantly. Then add a little hot water, enough to come halfway up the meat, cover, and simmer over medium heat. You don't have to pre-braise the meat for this dish — you can skip that step — but I like the meat soft enough to fall into strands. Trim any bad leaves off the cabbage and shred it, again however you like — large pieces or thin ribbons. Add the shredded cabbage to the meat and stir. Add the tomato paste, salt, allspice, and peppercorns, and stir again. Don't add any more water. Simmer over medium heat until done. How done is up to you — some like the cabbage a little firm, with some crunch left; others, myself included, like it very soft. You can also make this in a slow cooker.
