Chinese Noodles with Chicken

For this recipe, gather everything on the list: soy sauce, garlic, hot pepper (fresh or dried — dried is much hotter than fresh), bell pepper, carrot, onion (Chinese cooking usually calls for green onion, but you can use another kind), plus the noodles, chicken, and fresh herbs.

First, cook the noodles according to the package directions — usually you just drop them into boiling salted water and cook until al dente, then drain in a colander or sieve.

Prep everything before you start, since the ingredients go in one right after another and you won't have time to chop mid-cook. Cut the chicken fillet into small pieces.

Cut the bell pepper into small dice or slices (mine was frozen).

Cut the carrot into similar-size dice.

Smash the garlic clove and mince it.

Heat the sunflower or olive oil in a skillet, add the chicken, then some of the soy sauce and the black pepper, and stir. Cook, covered, for a minute to a minute and a half.

Transfer the chicken to a plate. Using the same pan, keep going with the vegetables and sauce. Add the minced garlic.

Add a little more oil and keep stir-frying.

Add the sliced celery and the white part of the green onion. Stir and cook briefly.

Add the carrot, then finally the bell pepper and a little hot pepper. Cook until tender, adding the rest of the soy sauce.

Return the chicken to the pan, stir, and heat through.

Add the noodles, toss gently, and heat everything through.

Divide the noodles and chicken among deep plates or bowls and serve.
