  • To make these creamy chicken meatballs without eggs, I always buy ready-ground chicken and a few chicken feet. I use the feet to make a broth, then run the ground chicken through a meat grinder along with bread soaked in about a quarter cup of milk. I mix the remaining milk and butter into the meat, shape the meatballs, and poach them in the broth for about 15 minutes — I start counting from the moment the broth comes to a boil and I've turned the heat down to medium. There are countless chicken recipes and I cook plenty of them, but this one became a favorite the moment I heard it on the radio, on a cooking show tucked between the ads and the music. The delicate flavor and remarkable ease make these creamy chicken meatballs a lifesaver when you need to get dinner on the table fast. Poached meat is easy on the stomach and won't pile on the extra pounds, so anyone watching their weight might want to keep it in mind. I usually serve this little miracle with a boiled-beet salad and millet, generously drizzled with ketchup. Better yet, wash the juicy chicken meatballs down with tomato juice. When the whole family's at the table, the juice disappears fast — but the meatballs go even faster. So for a big group, it's best to make a double batch, of course, unless there are other meat dishes on the way.
