Step 1:
How to bake pancakes with spinach? Prepare the products.

If you have frozen spinach, you need to give it time to thaw. If it is fresh (like mine), it needs to be rinsed well under running water, cut off the excess stems and blanch in boiling water for 15 seconds, then squeeze well.
Step 3:
Now shredding. If you want, you can use an immersion blender to grind spinach. If there is a stationary blender, it is also very good. We need to chop the leaves well. Put spinach and eggs in a blender bowl and chop well.
Step 4:
Add sugar, milk and flour and whisk everything well again. Add flour gradually, in small portions, focus on the desired consistency of the dough. Consider the fact that you may need a little more or less flour.
Step 5:
Check the consistency of the dough - it should be liquid, like thin pancakes.
Step 6:
Add vegetable oil, mix and leave the dough for 10-15 minutes - so that the gluten in the flour swells.
Step 7:
Start frying pancakes. Heat the pan well, before frying the first pancake, lubricate with vegetable oil (then it is not necessary, since we have oil in the dough), pour a ladle of dough and spread the dough in a circle around the pan with quick movements. Bake the pancake on a lower-than-average heat.
Step 8:
Flip the pancake to the other side and bring it to readiness. Next, bake all the pancakes in the same way.
Step 9:
These are"greenies" I got, 15 pieces. You can eat with sour cream, you can wrap any filling inside. It turns out a bright, tasty and flavorful dish.
