French-Style Pork Chops
Delicious, juicy pork chops with tomatoes and cheese. This has been the most popular way to bake meat in the oven since Soviet times, and these "French-style" chops are known in every family. For me the dish is tied to New Year's — we always baked these cheesy chops for the holiday.

- Use pork loin, carbonade (boneless loin), or leg, ideally with a thin layer of fat. Cut the pork into chops. Put each piece in a plastic bag (to keep it from splattering) and pound it on both sides with a mallet. Sprinkle generously with spices (I use barbecue seasoning) and let it marinate for an hour. 2. Peel the onion and slice it into very thin half-rings. To keep from tearing up, keep dipping the knife in cold water. 3. Cut large tomatoes into thin rounds across the seeds. 4. Grate the cheese (any melting cheese works) on a fine grater. 5. Line a baking sheet with foil (optional — it just keeps the sheet cleaner) and grease it lightly with vegetable oil. Lay out the chops with a little space between them so they don't stick together while baking (they look neater on the plate that way). Brush the chops with a thin layer of mayonnaise, then add a layer of onion, then a layer of tomato. Brush the tomatoes with another very thin layer of mayonnaise. Carefully sprinkle the cheese on top, keeping it off the gaps between the chops. 6. Put the baking sheet in an oven preheated to 400°F (200°C) and bake the chops for 40–50 minutes. Serve with rice, potatoes, or vegetables. You can also work in sautéed mushrooms (button mushrooms), swap the pork for chicken or turkey, add pineapple, or even use ground meat instead. To save time, cook the chops and a side together: spread finely chopped potatoes on an oiled baking sheet, top with the chops as described above, and bake it all together. The potatoes cook in the juices and fat from the meat and come out very tasty and juicy. Cook with love and in a good mood, and you'll get the most delicious results!
