- How do you make zucchini fritters stuffed with chicken?
- Wash and peel the zucchini, then grate it on the coarse side of a box grater. 2. Salt the grated zucchini, stir, and let it sit until it releases its liquid (about 10 minutes), then squeeze it out and drain off the excess. 3. Crack the eggs into the bowl with the zucchini. 4. Add ground pepper and the slaked baking soda. 5. Sift in the flour and stir everything until smooth. 6. Put the ground chicken in a separate bowl. 7. Peel and finely chop the onion and add it to the meat. 8. Season the filling with salt and pepper to taste. 9. Pour in the water and mix — it keeps the filling tender. 10. Heat the oil in a skillet. 11. Spoon the zucchini batter into the pan and spread it into thin, flat rounds. 12. Spread a layer of the chicken filling over each fritter, smoothing it out. 13. Top with another thin layer of zucchini batter. 14. Cover the skillet and fry until golden brown on both sides. Enjoy!
- Oils are only healthy up to a point — their smoke point, where the oil starts to burn and form harmful compounds. For how to pick the right frying temperature and the best oil for the job, see our guide.
- Tip: the wrong pan can ruin even the best recipe. For how to choose the perfect pan for different dishes, see our guide.
- Which zucchini work best? Go for young ones with tender skin. Wash and peel them — you can leave very thin skin on. If you're using more mature zucchini, cut off the tough peel and scoop out the seedy center.
