Cooking method
1. Wash the beef fillet well and dry it with a paper towel. Form a roll from a piece of meat, tying it in several places with a thick thread so that it holds its shape and does not fall apart.
2. In a separate small container, mix salt and ground black pepper together (you can add other spices if desired). Carefully rub the formed beef fillet roll with this mixture.
3. Pour a little vegetable oil into a large frying pan. Place the beef roll in a frying pan and fry the meat evenly on all sides over medium heat until dark brown for about 10 minutes. Remove the pan from the heat and transfer the fried meatloaf to a plate so that it cools down.
4. Turn on the oven at 200 degrees.
5. Sprinkle a little flour on a large cutting board and spread out a sheet of puff pastry. Roll it out into a large square with the same thickness around the perimeter.
6. Cut the ham into thin strips. You can take a ready-made sliced Prosciutto ham. On a rolled sheet of puff pastry, a little short of the edges, evenly lay out thin strips of ham, slightly overlapping each other.
7. Put the dried tomatoes on the ham and distribute them over the entire area of the rolled dough, without going to the very edge.
8. Transfer the fried piece of beef to the middle of the puff pastry covered with ham. Gently roll the puff pastry around the meat, as if wrapping the meatloaf in it. Crack an egg in a bowl and grease the edges of the puff pastry, thus gluing them together. Cover the entire surface of the puff pastry with the remaining egg. Sprinkle the swirled roll with sea salt on top.
9. Carefully transfer the roll to a baking sheet, having previously covered it with parchment paper. Put the baking sheet in the preheated oven for 45-50 minutes.
10. After the specified time, remove the baking sheet from the oven and let the meatloaf stand for about 10-15 minutes. Then cut it into slices, garnish with rosemary sprigs and you can serve it on the table.
