Oven-Baked Beef in Puff Pastry

- Rinse the beef fillet well and pat it dry with a paper towel. Shape the piece into a compact roast and tie it in a few places with kitchen twine so it holds its form and won't fall apart. 2. In a small bowl, mix the salt and ground black pepper together (add other spices if you like). Rub the mixture all over the tied fillet. 3. Pour a little vegetable oil into a large skillet. Add the beef and sear it over medium heat, turning to brown it evenly on all sides until deep brown, about 10 minutes. Take the pan off the heat and move the seared roast to a plate to cool. 4. Preheat the oven to 400°F (200°C). 5. Dust a large cutting board with a little flour and lay out the sheet of puff pastry. Roll it into a large, evenly thick square. 6. Cut the ham into thin strips — ready-sliced prosciutto works great here. Lay the ham strips evenly over the pastry, overlapping them slightly and stopping a little short of the edges. 7. Scatter the sun-dried tomatoes over the ham, spreading them across the pastry but keeping clear of the very edge. 8. Set the cooled, seared beef in the center of the ham-covered pastry. Gently fold the pastry up and around the meat, wrapping it into a neat parcel. Beat the egg in a bowl and brush the pastry edges to seal them together, then brush the whole surface with the rest of the egg. Sprinkle the top with sea salt. 9. Carefully transfer the parcel to a parchment-lined baking sheet. Bake in the preheated oven for 45-50 minutes. 10. When the time is up, take it out and let the roast rest for another 10-15 minutes. Then slice it, garnish with rosemary sprigs, and serve. Enjoy!
