Cooking method
1. My eggplant, cut into circles, breaded in flour, then fry in vegetable oil on both sides until browned. Spread the fried circles on a paper napkin, salt and pepper to taste, let the excess oil soak in, then cut each circle into small pieces.
2. My tomato, cut into small cubes. If the tomato is too juicy, it is better to remove the pulp with seeds.
3. Dry the bread in the oven for 2-3 minutes, peel the garlic, rub each piece of bread with it.
4. We smear each toast with cottage cheese, lightly salt, spread tomato and eggplant on top of the cheese, decorate the sandwiches with parsley.
