Chickpea Flour Flatbreads

  • Add the chickpea flour to a suitably sized bowl. Next add the turmeric, ground chili, ground coriander, sugar, salt, and the measured amount of baking soda. Stir all the dry ingredients together until fully combined. Wash the cilantro and tomatoes, then pat everything dry with a paper towel. Finely chop the cilantro, cut the stem ends out of the tomatoes, and dice the flesh finely. Peel the onion, then cut it into very small dice with a knife. Combine the chopped onion, tomatoes, and cilantro in a bowl. Pour the water into the flour mixture and stir well. You can use a mixer or blender, since you'll want to beat it thoroughly so no lumps remain. If the batter turns out too thick, add a bit more water — the right consistency is like thick sour cream. Now fold the chopped vegetables and herbs into the batter and mix well again. Let it rest for 10 minutes. When the time is up, set a skillet over medium heat and get it good and hot (dry, with no oil). Carefully spoon the batter onto the hot surface. You can make them any size you like, from small to fairly large. Cook the flatbreads over medium heat until golden and browned, brushing the edges with a little vegetable oil as they cook. Flip them and cook the other side the same way, until browned. If they brown well on the outside but don't cook through inside, turn the heat down a bit. Keep going until all the batter is used up. And that's it! Serve the flatbreads hot or at room temperature — either way they're delicious and wholesome. Enjoy!
