Battered Chicken Breast Cutlets
Really tasty, soft, tender chicken cutlets! Serve them for a holiday spread or an everyday lunch or dinner. Chicken cutlets are great with any side or none at all — they're especially good with fresh vegetables or a salad. This light yet nourishing, protein-rich dish is quick and simple to make. Even a beginner can handle it; the key is to use fresh, ideally chilled rather than frozen, chicken breast.

Step 1:
Gather the ingredients. If your chicken breast is chilled, just rinse it and cut it into serving pieces no more than 1/2 inch (1 cm) thick, so the cutlets stay thin and cook through. Cutlets from frozen meat won't be as good as from chilled, but if that's all you have, thaw it and soak it well first.

Make the batter. Crack the egg into a bowl (use more eggs if you're making more meat). Add salt and ground black pepper to taste.

Whisk the egg thoroughly with a fork until smooth.

Add the flour. Adjust the amount up or down depending on the consistency — the batter should be like thick sour cream.

Pound the chicken pieces on both sides with a meat mallet (or the blunt edge of a knife if you don't have one). Chicken is very tender, so it doesn't need much pounding. Season each piece with a little salt and pepper on both sides, then dip it into the batter.

Heat the vegetable oil in a skillet and lay the chicken in.

Fry the cutlets until golden on both sides. Cover the pan with a lid for a few minutes during frying so the meat cooks through inside. Serve the cutlets with a side dish, vegetables, mayonnaise, or a sauce of your choice. They're good both hot and cold. Enjoy!
