Cooking method
- First, mix up the dough from the listed ingredients: combine the flour with the sparkling water, beat in one egg, and add the sugar and salt. Knead the dough well and set it aside to rest for about half an hour. Set aside one-eighth of the cheese (about 50 g) and slice it into thin sheets; grate the rest on the coarse side of a grater. (Why do it this way, I honestly never fully understood, even after making this recipe — maybe a slice of cheese helps spread it evenly through the inside of the cheburek?) Divide the dough into balls and roll each one out to about the size of a plate. Lay a slice of cheese on one half of the round and sprinkle grated cheese over it. Fold over the other half and crimp the edges shut, like regular chebureki. Fry the cheese chebureki the usual way, in vegetable oil, on both sides. Serve hot.
