Giant Special Meatballs
Big, hearty, and really tasty — these meatballs are a hit with kids and grown-ups alike. I came across the recipe for these giant special meatballs while reading, of all things, a teen magazine that ran a few recipes for moms and handy dads, and I finally made them for the first time recently. They're a treat for the whole family, especially washed down with tomato juice, and they're wonderful with mashed potatoes.

Cooking method
- I start by making the meat mixture: bread crumb soaked in water or milk, beef, and pork, all run through the grinder twice. Next I boil the rice, then mix it thoroughly into the meat. I brown the giant special meatballs in a skillet, then finish them by simmering over low heat in tomato paste stirred into two cups of hot water. Checking doneness is easy: I break one open and taste it — if it's not raw inside, dinner's ready. They say hot food is never raw, but I still prefer my meatballs cooked all the way through.
