- I first came across this special Turkish lamb kebab at a seaside café, and once I made it myself, the recipe card earned a place of honor in my kitchen. It comes together with very little effort. First, finely chop the meat and the fat. Sprinkle the chopped meat with pepper, minced onion, and finely chopped fresh herbs. Then, with hands dampened in water, season everything with salt and shape the mixture into medium sausages, sliding a wooden skewer through the center of each, and chill them in the fridge for a couple of hours. Sear the kebabs quickly in a hot skillet and serve with a spicy store-bought sauce or ketchup. Fans of Middle Eastern cooking will love this one, and even the pickiest gourmet will be won over. Best of all is eating these kebabs with crisp lavash. Of course, by the book, kebabs should be cooked over a grill or on an electric grill — and if you've got one, making lamb kebabs can be a great excuse for a "balcony cookout" when it's summer outside but you just can't get away to the countryside.
