Lavash Rolls with Chicken, Mushrooms, and Cheese

A delicious and very filling dish for lunch or dinner. For fans of lavash (thin Armenian flatbread) and everything you can make with it, here's a tasty appetizer. These lavash rolls with chicken, mushrooms, and cheese are a perfect companion to mushroom soup, and just as good on their own.

  • Finely chop the chicken and fry it in vegetable oil until almost cooked through. Finely chop the mushrooms and fry them, along with some onion if you like. Coarsely grate the cheese. Cut each lavash sheet in half. Lay chicken, mushrooms, and cheese on one piece of lavash—you can also add a sauce if you like (dill, cheese, or garlic)—then roll it up. Place the rolls in a baking dish, brush the tops with mayonnaise or beaten egg, and bake in an oven preheated to 350°F (180°C) until the tops are golden, about 20–25 minutes. Serve these rolls with a bowl of soup or on their own. Enjoy!
