- Cut the bread into small cubes and spread them on a baking sheet. Put it in an oven preheated to 250°F (120°C). The croutons should dry out and turn golden. Blend the onion and chicken breast in a food processor. Add the egg, salt, and pepper, and knead the mixture well. Grate the cheese and butter, add the finely chopped herbs, and mix. Take a piece of the ground chicken about the size of an egg and flatten it into a thin patty. Place a small piece of the cheese filling in the center and pinch the edges closed. Shape into an oval cutlet. Coat the cutlet in the toasted bread crumbs and fry in well-heated vegetable oil. Transfer the cutlets to a baking sheet and finish in the oven at 350°F (180°C) for 20–25 minutes.
