  • Start by making the filling. Take the butter — it should be soft. Finely chop the dill. Mix the butter with the dill and the juice of half a lemon, divide into about 11 portions, and put them in the freezer. Grind the chicken breasts together with the lard, then season with salt and pepper. Add one egg and 250 g (about 1 cup) of milk and mix everything in thoroughly. Make the batter: whisk the milk, egg, and flour together so there are no lumps — it should be about the consistency of pancake batter. Grind the bread into crumbs in a blender. Form the cutlets: spread some of the meat mixture in your palm (it's easier that way), place a piece of the frozen butter in the center, and wrap the meat around so the butter stays inside. Dip each cutlet in the batter, then roll in the breadcrumbs, shaping it into a ball. Fry in preheated sunflower oil (I use a small saucepan and fry them right in it). Transfer to a baking sheet and bake for about 15 minutes in a preheated oven at 350°F (180°C) — I cover them with foil so they steam through.
