Step-by-step cooking
Step 1:
Cut the rabbit into pieces and pour cold water for one to two hours.
Step 2:
Then pat the rabbit meat with a paper towel and marinate: sprinkle with salt and ground black pepper, add 1 tbsp soy sauce. Mix the meat well, tighten the film and leave to marinate in a cool place for an hour or two, depending on how much time you need until the dish is ready. You can leave it in the refrigerator overnight.
Step 3:
If the rabbit is fat enough - when cutting, we collected internal fat, but there is still enough of it on the back and legs to avoid using oil. If your rabbit is not greasy, then oil the rabbit pieces and the baking sheet. Put the rabbit on a baking sheet and put it in an oven heated to 200 degrees so that the meat "grabs" and packs all the juices.
Step 4:
Meanwhile, coarsely chop three onions.
Step 5:
Cut the carrots into cubes or large strips.
Step 6:
Cut two or three large garlic cloves with petals.
Step 7:
Remove the slightly baked rabbit from the oven.

Sprinkle everything with carrots. Mix the rabbit pieces with the vegetables and return them to the oven again so that the vegetables are also slightly baked. All this will take about half an hour.
Step 10:
Dilute sour cream with water, add salt, pour in a spoonful of soy sauce.
Step 11:
Remove the rabbit with vegetables from the oven - this is how it looks at this stage.
Step 12:
Pour the rabbit with vegetables with the resulting sauce. Tighten with foil or cover the mold with a lid. Return the dish to the oven, after 20 minutes, reduce its heat to 160 degrees. In total, it took me 100 minutes to bake.
Step 13:
At the end of cooking, remove the foil, turn over the rabbit pieces and, with the grill or convection turned on, fry the top of the meat.
Step 14:
The rabbit baked in the oven is ready! Bon appetit!
