Squid with Carrots and Onions
A tasty main, salad, or appetizer for both everyday meals and holidays. This dish fits right into a healthy diet and pairs well with any mild side — rice, mashed potatoes, and so on. It's not just for family, either: squid with carrots and onions can dress up a holiday spread, too.

Step 1:
How do you braise squid with onions and carrots? Start by prepping the squid tubes. First, thaw them, since they're usually kept in the freezer.

Second, clean them: pull out the innards and the quill (the clear backbone), and peel off the thin skin. Just dip the tube in boiling water for a second, or hold it there, and the skin comes right off.

Next, cut the squid tubes into thin rings.

The carrot is one of the main players in this dish. Rinse it, peel it, rinse again, pat it dry, and cut it however you like.

The onion is another key ingredient here. Peel it, rinse and dry it, then slice it into half rings.

Set a skillet (or a sauté pan or small pot) over the heat, and once it's hot, add enough oil to coat the whole surface. Start with the onion.

As soon as the onion turns slightly translucent, add the carrot. Honestly, if you're working with small amounts, you can just cook everything together.

Cook the vegetables for about 5 minutes, then add the squid rings.

Cook over medium heat at first, then cover and let it simmer over low heat for about 5 minutes. Add salt and pepper at the end, a minute before turning off the heat. Don't forget to stir everything.
- A few more tips: You can even thaw squid under running hot water. There are two ways to clean the tube — scoop everything out with your finger, or turn the tube inside out. The main thing is not to forget to remove the quill! You can cut the squid a different way too, say into strips instead of rings. For a more presentable dish, it helps to cut all the components into the same or a similar shape. But you can also grate the vegetables on a coarse grater. For variety, you can add tomato, sour cream, or other vegetables to the main ingredients. Remember not to cook squid too long, or it will turn rubbery. Spoon the juices that form during braising over the squid and the side dish to make them juicier.
