- How do you make meatball hedgehogs with potatoes?
- Cover the rice with water, bring to a boil, and cook for 3 minutes. Drain and rinse the parcooked rice. 2. Peel the carrots, onion, potatoes, and garlic. Cut the onion into quarter-rings, the carrots into thin strips, and the potatoes into 8 pieces each; finely chop the garlic. Cut the half chili into large pieces and the tomatoes into cubes. 3. Add salt, ground pepper, garlic, and rice to the ground meat. Knead it well and chill it in the fridge. 4. Heat the oil in a skillet and sauté the onion and carrot. Add the tomatoes and chili. Cook for 4 minutes, stirring now and then. 5. Add the potatoes, pour in enough water to cover, season with salt, and bring to a boil. 6. Roll the meat mixture into hedgehog balls, arrange them evenly over the vegetables, cover, and cook over medium heat for 30 minutes, or until the potatoes are fully done. Enjoy!

- Every oil is only good up to a certain temperature — its smoke point, beyond which it starts to burn and forms harmful compounds. For help choosing the best frying oil and getting the temperature right, see our guide.
