Step 1:
How to bake potatoes with bacon in the oven? Prepare the necessary ingredients. Potatoes for this dish need young, not very large, but not small, smooth, with a small number of eyes and about the same size. The Red Scarlet variety with red peel and yellow flesh is well suited for baking. It is baked quickly enough and does not fall apart. Smoked bacon or raw meat is better to buy sliced. It will take about 6 thin strips.
Step 2:
Wash the potatoes, dry and peel, trying to make the tubers as smooth as possible.
Step 3:
Blot each potato with paper towels from excess moisture.
Step 4:
Salt the tubers, pepper on all sides, sprinkle with Italian herbs (I used a mill) or ready-made spices suitable for potatoes.
Step 5:
Wrap each potato with a strip of bacon. Put the potatoes in a baking dish, which can be pre-lightly greased with vegetable oil with a high smoking temperature.
Step 6:
Put the mold in a preheated 200 degree oven and bake for about 40 minutes. Check readiness with a wooden skewer. If the potatoes are not ready, the bacon is well browned, cover the mold with foil. You can serve potatoes with fresh vegetables. Or prepare the sauce: combine 3 tbsp sour cream with 1 tbsp olive oil, 1 tbsp lemon juice and 1 tsp granular mustard. Mix or whisk in a blender for a more homogeneous consistency.
If you use ready-made spice mixes, be sure to read the composition on the package. Often, salt is already present in such mixtures, take this into account, otherwise you risk over-salting the dish.

So that the oven has time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking).
Any heat-resistant form is suitable for this recipe. If you use a silicone mold, then you do not need to smear it with butter or margarine. But it is better to lightly lubricate metal, ceramic or glass dishes with vegetable oil so that the baking does not burn.
