Step 1:

Sea bass, previously cleaned of scales, fins and tail, is well washed. We remove the black film inside the abdomen. Rub each fish with salt and coat with vegetable oil. If desired, we use spices.
Step 4:
Cover the baking sheet with foil. We spread the fish, make 4 transverse incisions on top of each carcass. In each insert a slice of lemon. Finely chop the parsley, sprinkle the fish on top and put it in the bellies. Wrap the foil well, fasten the edges tightly.
Step 5:
Bake the perch at 180 degrees. about 25 minutes. We take it out of the oven, unfold the foil and put it on for another 5-7 minutes so that the fish is slightly browned. We serve the perch hot with mashed potatoes or with fresh or stewed vegetables.
