Step 1:
Let's start with the preparation of the khachapuri dough. Sift the flour into a deep bowl (this will enrich it with oxygen and the baking will turn out more magnificent), add salt, sugar, dry yeast, mix thoroughly.
Step 2:
Make a small depression in the flour, pour in warm milk (35 degrees, if the milk is hot, the yeast will die and the baking will not rise) and add vegetable oil.
Step 3:
Gently adding flour from the edges with a whisk, knead the dough.
Step 4:
Sprinkle the tabletop with flour, put the dough on it and continue kneading with your hands. Form a ball of dough.
Step 5:
Put it in a deep bowl, cover with a towel and send it to a warm place without drafts for an hour.
Step 6:
While the dough is suitable, you can do the filling. Grate cheese and butter, add salt, add egg and mix. Form three identical balls from the filling.
Step 7:
After an hour, the dough should double in size.
Step 8:
Divide it into three parts, knead each and form three small cakes.
Step 9:
Roll out each tortilla into a circle with a diameter of 20-22 cm and put a ball of filling in the middle.
Step 10:
Pinch the dough on top, hiding the filling.
Step 11:
Turn the workpiece pinched down and roll it into a flat cake with a diameter of 20, 22 cm. Do this carefully so that the dough does not break, if necessary, sprinkle the tabletop and rolling pin with flour. At the top, make a hole for the steam outlet of one and a half cm in size, we do not make the hole through, but only in the upper layer of the dough.
Step 12:
Add a tablespoon of milk to the yolk, mix and lubricate all the khachapuri, then sprinkle with cheese grated on a coarse grater, grease the baking sheet with vegetable oil and transfer the khachapuri to it, bake in a preheated 180 degree oven for 30-35 minutes until browning. It may take a little more or less time to navigate by your oven.
Such khachapuri are delicious both hot and cold. According to this recipe, there are a lot of them, it will last for a long time. Tip - choose high-quality and fresh sulugini cheese and fresh sweet butter, then khachapuri will turn out simply incomparable!
