Then add baking powder, vanilla and a pinch of salt to the flour. Salt acts in the sweet dough as a flavor enhancer. Add sugar. Mix all the loose products so that they are evenly distributed over the flour.
Step 3:
Remove the frozen butter from the freezer and grate it on a coarse grater directly into a bowl with flour. To prevent the oil from melting from the heat of the hand, wrap it in a package. And at the very end, you can roll it in flour, so it won't slip out.
Step 4:
Rub the flour mixture with butter with your hands until a sand crumb forms. Work quickly — the colder the butter in the dough, the better the shortbread dough.
Step 5:
Beat an egg into a crumb, put sour cream and mayonnaise if you use it. Start kneading the dough by stirring it first with a spoon and then with your hands.
Step 6:
The dough will very quickly become homogeneous and gather into a ball. Cover the bowl with plastic wrap and put it in the refrigerator for 30 minutes.
Step 7:
Meanwhile, prepare the filling. How to make a filling. Prepare the products for her. Take medium apples, sugar is suitable for both brown and ordinary, white, which is available. Brown will give the pastry a caramel note. Add cinnamon to taste, you can use vanilla instead or add nothing at all — it's a matter of taste.
Step 8:
Wash the apples, cut into quarters. Remove the seeds and cut off the peel. Cut the peeled apples into slices.
Step 9:
Put them in a dry frying pan, preferably with a non-stick coating. Add sugar and cinnamon. Put the pan on the smallest fire. Simmer the apples on the fire for about 5 minutes, they will soften a little, let the juice, the sugar will melt. Mix them a couple of times with a spatula. The filling is ready.
Step 10:
Prepare the filling. How to make a fill? Prepare the products. Choose high-quality, natural sour cream, the fatter, the tastier. But also calorific, consider this. Instead of powder, you can take sugar, and instead of potato starch — corn, it will need twice as much.
Step 11:
Put all the ingredients for pouring into one bowl — sour cream, egg, powder and starch.
Step 12:
With a whisk, mix everything until smooth. The fill is ready.
Step 13:
Take the dough out of the refrigerator. Cut off a third and put it back — it will go to decorate the top. Roll out two thirds on parchment into a circle. My dough turned out to be a little sticky, I rolled it out between two sheets of parchment. But you could just sprinkle it with flour.
Step 14:
Transfer the dough to a baking dish, I have a detachable mold 20 cm in diameter. Form the sides of the pie. Since there is a lot of oil in the dough, the mold does not need to be lubricated. I have removed the parchment, you can bake on it.
Step 15:
Pour the sour cream filling onto the dough. Spread the apples on top, pour the resulting caramel on them. Spread the apples evenly over the filling.
Step 16:
Bend the sides a little so that they fit the filling. From the remaining third of the dough, make the top of the pie — you can cut it into strips and make a lattice, you can, as I cut out decorations in the form of flowers and leaves from it. Or you can just roll out the dough into a circle and make a regular top.
Step 17:
Preheat the oven to t 180 ° C, I have an electric, top-bottom mode. Put a pie form in it. Bake the pie for 40-45 minutes, until golden brown. Remove the finished cake from the oven and cool, then remove from the mold.
Step 18:

Important note!!!
It seemed to me that there was not enough filling for such a quantity of dough. I advise you to double its number. Roll out the dough itself thinner, it will grow during baking. And take a larger form, 23-24 cm.
