Cooking method
First of all, you need to turn on the oven at 180 degrees Celsius for preheating.
Clean the carcasses of ice fish, remove all the insides, cut off inedible fins, cut off heads and tails. Then rinse them thoroughly under cold running water and wipe them dry with paper towels or thick napkins.
Separately, in a small container, mix sea salt and freshly ground black pepper together. Then take this mixture and rub the ice fish carcasses well with your hands from all sides.
Rinse the parsley, dill and green onions under water and dry them, spreading them out on a paper towel. Then finely chop the greens. Roll the carcasses of ice fish in chopped parsley, dill and green onions, abundantly covering them with herbs from all sides. Then pour lemon juice and olive oil over the fish. And then leave it in this form for 5-10 minutes so that the spices are absorbed into the skin of the fish and give it a noble spicy taste.
Prepare a baking dish - glass or cast iron, or a baking tray for the oven. It is not necessary to lubricate the mold, since the fish is already covered with olive oil. Put the fish seasoned with spices and herbs into a baking dish and bake in a preheated oven for about 15 minutes until fully cooked.
The basic cooking technique of this delicious ice fish is very simple. Since this fish contains a minimum amount of fat and has very tender and even slightly dry meat, such a delicacy product cannot be subjected to prolonged heat treatment. Therefore, so that it does not dry out and turns out tender and appetizing, it is baked for a minimum amount of time. Only then does she manage to keep all her flavors and be juicy and soft inside.
Ice fish baked in the oven is served, sprinkled with fresh herbs and garnished with lemon slices.
