Step 1:
How to make homemade carrot cookies? Prepare the products. Choose fresh, juicy carrots, without dark spots. Butter should be of high quality, corresponding to GOST. Take it out of the refrigerator in advance so that it softens. You can adjust the amount of sugar to your liking. You can not use nuts, but you can chop them and put them in the dough. Cookies with raisins will also be delicious.
Step 2:
Wash the carrots well, dry and peel. Grate it on a fine grater. The smaller the carrots are grated, the yellower the cookies will turn out.
Step 3:
Take a large bowl, put soft butter in it. Add sugar. Mix the butter and sugar with a spatula. The purpose of the process is not to beat, but simply to combine the products, so you do not need to use a mixer.
Step 4:
Add grated carrots to the oil mixture. Mix until the ingredients are completely combined — the mass should turn orange.
Step 5:
Sift flour into a bowl. Only not all at once, but about 2/3 of the total. How much flour to put will depend on the juiciness of the carrots. I didn't have all the flour left, but maybe vice versa, I'll have to add it. Pour baking powder.
Step 6:
Knead the dough, first with a spoon, then with your hands. In the process, decide whether to add more flour or not.
Step 7:
The dough should become thick, but at the same time remain soft. It will be sticky, don't let it scare you. Assemble it into a ball.
Step 8:
Take a baking sheet, cover it with baking parchment. Wetting your hands with cold water, roll balls the size of a large walnut. Arrange them at a distance from each other, as the cookies will increase in size during baking.
Step 9:
Optionally, you can decorate cookies with walnut halves. Press them into each cookie.
Step 10:
Bake cookies in the oven, preheated to 180 ° C, for 20-25 minutes, until golden brown. Determine the exact time and temperature of baking according to your oven.
Step 11:
Remove the finished cookies from the oven, cool and serve to the table. Bon appetit!
