Step 1:
In a small bowl, combine all the liquid ingredients - milk, egg, lemon juice and honey. For flavor, you can add a little lemon zest to the mixture.
Step 2:
Sift the flour together with baking powder, soda and salt into a large bowl. Add sugar and pour in the mixture of liquid ingredients. Mix the dough until smooth, but do not beat.
Step 3:
Lubricate the doughnut molds with vegetable oil and put 5-6 blueberries on the bottom (you can use frozen berries). Fill the molds with three-quarters of the dough, put a few more berries on top.
Step 4:
Preheat the oven to 240 degrees and bake the donuts for 8-10 minutes. Meanwhile, whisk the powdered sugar and lemon juice for the glaze. When the donuts become a beautiful golden color, take them out of the oven and let them stand for 5-7 minutes, and then gently pull them out of the molds with a spatula. Cover the donuts with lemon glaze after they are completely cooled.
