French Macaroni cookies from Alain Ducasse

A great French pastry for professional housewives! The recipe is very fragile and delicate, like everything French. To be honest, it turned out to be perfect pasta (the nasal "n" sounds here) I don't have it right away, from the third time, probably. But when it happened, I was elated! Tip: to make the cake mugs look the same, I drew them on paper with a pencil in advance ;-) From France a few years ago, I brought not only impressions, but also a love for French Les macarons cakes. It was back then, when I was visiting friends in Lila, I was skeptical about the evening in a cafe for "pasta". It was back then, without having tried more than a hundred fillings and all kinds of crispy multicolored shapes of these cakes, I was in such a hurry to enjoy them. But now, in a French bakery on the Old Nevsky or in the lobby of I-MAX, in a tiny French patisserie, I knowingly enjoy the variety of Les macarons. Homemade recipes exist, they are shared, surprised, admired, interpreted in their own way, invent new macaroni cakes! Here is one of them: a recipe for chocolate macaroni from Alain Ducasse.

    • Beat the whites, adding granulated sugar. Leave the mixture to "meringue" for 2 minutes. Mix with nuts and powder. Add a dye. The mixture should shine and not be too liquid.

    • Fill a cooking bag with a mass and through a cone with diameters of about 8 mm. create discs with a diameter of about 3 cm on a baking sheet covered with baking paper.

    Leave for 30 minutes to slightly cover with a crust.

    • Bake for 10 minutes at a temperature of 150 degrees.

    Preparing the filling: • Mix all the ingredients for the filling, except chocolate, bring to a boil in a small saucepan, remove, then add the chocolate, mix and put on fire again. Cook for a minute after boiling.

    Fasten two baked cake shells with a ball of cooled filling. Macaroni cake is ready! Bon Appetit !
