Step 1:
How to make ears from puff pastry with sugar? Prepare the products. Take any puff pastry (suitable for both yeast and yeast-free, homemade or purchased, store-bought). You can use both regular, white, and cane sugar, which will give the baking a caramel taste.
Step 2:
Defrost the puff pastry. To do this as delicately as possible, transfer it in advance from the freezer to the bottom shelf of the refrigerator. Unfold the thawed dough and roll out into a thin layer on the table, lightly dusted with flour.
Step 3:
Sprinkle the dough with granulated sugar. Here, to taste, you can use the ingredients that you have, for example: add ground cinnamon or vanilla sugar to the granulated sugar. Sprinkle the rolled layer with chopped nuts. You can make salty "ears" and add a little salt instead of sugar, and put chopped olives on top. Lightly press the sprinkled sugar into the dough, passing over the dough with a rolling pin again.
Step 4:
Now start molding. From the wide edge, roll the dough into a roll, reaching only to the middle of the rolled and sugar-sprinkled layer.
Step 5:
Now roll up the second part of the dough remaining free in the same way. You should get a piece of dough rolled from both ends to the middle.
Step 6:
Cut the resulting "bundle&cut into pieces 1.5 or 2 cm wide and place them on a baking sheet lined with parchment paper. Leave free space between the blanks, because the "ears" will increase in volume very significantly during the baking process. Put the prepared dough in a preheated oven to 200 degrees and bake, taking into account the characteristics of your oven, for about 20 minutes.
Step 7:
Remove the finished browned "ears" from the baking sheet and let cool. If desired, sugar "ears" can be sprinkled with powdered sugar. Serve to the table. Bon appetit!
When the top layer of baking is slightly browned, check it for readiness: pierce it with a wooden skewer in several places, if the skewer comes out dry, then the mold (or baking sheet) can be taken out of the oven.
