Step 1:
How to make shortbread cookies with jam? Prepare the products. Take high-quality butter, made according to GOST, with a fat content of 82%. Eggs are large, category zero. Vinegar 6% — it will be needed for quenching soda. For shortbread dough, it is important that all the ingredients are of the same temperature. Therefore, take them out of the refrigerator in advance.
Step 2:
Rub the soft butter at room temperature with sugar. For this procedure, I used a regular fork.
Step 3:
Beat in the egg and mix the mass again until smooth.
Step 4:
Extinguish the soda with vinegar and add to the dough.
Step 5:
Add salt, sift flour. For baking, the sieving procedure is very important — the finished products are very lush and tender. Therefore, do not neglect this process.
Step 6:
Knead the dough. It turns out soft and smooth. Divide the dough into 2 equal parts, wrap one part in a film and put it in the freezer.
Step 7:
Heat-resistant mold, preferably square shape, lubricate with oil. You can use a regular baking sheet.
Step 8:
Spread one part of the dough (not from the freezer) on the bottom. About 5-7 mm thick. It's easy to do with your hands.
Step 9:
Next, put a layer of jam. It can be any jam, not very liquid and without seeds. Also, the purchased jam is perfect. I took homemade apple jam and purchased kiwi jam. Spread the jam or jam all over the dough.
Step 10:
Rub the remaining dough from the freezer on a coarse grater with a thick layer so that all the jam is covered with dough. Bake in a preheated 180 degree oven for 20-30 minutes until browning. Cut the finished cookies hot right in the mold into squares of the desired size, cool and serve to the table.
Step 11:
Such cookies are perfect for both hot tea and cold milk. Enjoy your meal!
Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
