Step 1:
Prepare the products. We will need a standard set for charlotte - eggs, sugar and flour, but instead of apples we will take bananas. Choose bananas for baking very ripe, with spots - they are sweeter and more fragrant.
Step 2:
Break the eggs into a bowl, add sugar and start beating them with a mixer. Since the dough for charlotte is a sponge dough, we follow the rules for it. It is necessary to beat only at low speeds so that all the air bubbles formed during whipping are of the same size. Too large bubbles will burst during baking, and the dough will not rise.
Step 3:
Whisk until the volume is doubled.
Step 4:
Add baking powder to flour, mix. Sift the flour to the eggs. Do not skip this step - sifting additionally enriches the dough with oxygen, which makes baking soft and airy.
Step 5:
Gently mix the dough with a spatula, preferably silicone, as it will not damage the beaten egg structure. We achieve complete uniformity of the dough.
Step 6:
Peel the bananas and cut them into smooth circles about 1 cm thick. We take a baking dish, lubricate it with a small piece of butter. Pour half of the dough on the bottom. We level it with a spatula.
Step 7:
Spread a layer of bananas on the dough layer, completely covering it.
Step 8:
Pour the remaining half of the dough on the bananas, level it out. We put the remaining bananas on top.
Step 9:
Bake the charlotte in a preheated 190 degree oven for about 40-45 minutes. Readiness is determined by a toothpick - it should remain dry after piercing the dough. Take out the charlotte, let it cool down a little and take it out of the mold. Serve warm with a scoop of vanilla ice cream. The top can be sprinkled with powdered sugar.
I baked a charlotte in the shape of 20 cm, it turned out not to be high. I would add another egg and slightly reduce the amount of flour to make the dough more lush.
Banana really gave the familiar pie a new sound. It was very tasty to eat a warm charlotte with ice cream.
