Step 1:
Prepare the specified ingredients. Kefir I take 3.2%, you can knit any, even better if it stood longer in the refrigerator. Wheat flour, but it can be diluted - make a mixture of wheat and rye / whole grain (in total, so that there are 210 grams). Dry spices I take a pinch of Provencal herbs, you can take your own spices to taste, for example, thyme, oregano, paprika will do. The cheese is hard, you can take any to taste. Ham can also be replaced with brisket, sausage.
Step 2:
Remove the ham and cheese from the packaging, remove the films. Cut the ham into small cubes, grate the cheese on a coarse grater. Turn on the oven to warm up to 180 degrees.
Step 3:
Take a deep bowl, break a raw egg into it and beat lightly with a fork or whisk, add kefir, vegetable oil and mix until the ingredients are combined.
Step 4:
In another bowl, mix chopped ham, grated cheese, salt, soda, dry spices. Mix the mass, pour the sifted flour with baking powder into it and mix again.
Step 5:
In a deep bowl, combine the dry ingredients with the liquid and mix until the components are combined.
Step 6:
For baking cupcakes, you can simply lubricate the cupcake mold with vegetable oil and spoon out the mass without reaching the edges of the mold. You can also use paper capsules, then you do not need to lubricate with oil. Put paper capsules in cupcake molds, put the dough in them. Put the cupcake molds in a preheated oven for 25 - 35 minutes. Check readiness with a wooden skewer, it should come out dry from the middle of the cake.
Step 7:
Get the finished cupcakes out of the oven. Allow to cool slightly in the form and can be served to the table. Such cupcakes are good both hot and cold. They are perfect for breakfast, as a snack or snack with a glass of white wine.
