Step 1:
How to bake a delicious charlotte with apples and cinnamon? Prepare the specified products. The number of chicken eggs can vary from three to five depending on their size, the volumes of premium wheat flour and granulated sugar at the same time remain unchanged - 1 cup each
Step 2:
Break the chicken eggs into the bowl of a food processor or into a deep container with high sides, if you plan to beat them with a mixer. A blender for whipping eggs is not suitable, since it is necessary to get a lush, airy foam. Gradually add granulated sugar, vanilla sugar and salt to taste, about 2 pinches. It is not necessary to add salt - the spice will set off the sweet taste of the dish. Beat until a white homogeneous air mass.
Step 3:
Peel the apples, cut and cut the seeds, rinse and cut into cubes or slices - as desired. lightly sprinkle with lemon juice (so as not to darken) and mix. The smaller the fruit slicing is, the higher it will rise when baking in the dough.
Step 4:
Gradually pour wheat flour into the beaten egg mass, preferably pre-sifted and baking powder. Beat at low speed for about 1-2 minutes, you can simply mix the flour into the egg mass so as not to release air bubbles from it.
Step 5:
Lubricate the mold with oil. Pour half of the dough into a form greased with butter or vegetable oil, pour in pieces of apples with raisins. Sprinkle the apple slices with ground cinnamon on top.
Step 6:
Pour the second half of the dough into the mold and gently smooth it out. Place in a preheated 180 C oven and bake for about 25 minutes. The recipe uses a shape with a diameter of 20 cm. The smaller the shape in diameter, the higher the sponge cake will turn out in it!
Step 7:
As soon as the cinnamon charlotte is baked, turn off the heating and do not take the cake out of the hot oven for another 10 minutes so that it does not "opal" due to the temperature difference. After that, take out the mold and remove the charlotte from it, lightly drawing a knife along its edges inside the mold. Sprinkle the cooled cake with powdered sugar.
When the top layer of baking is slightly browned, check it for readiness: pierce it with a wooden skewer in several places, if the skewer comes out dry, then the charlotte is ready.
Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
Make it a rule that the amount of flour is never determined in advance when preparing flour and bread products! This indicator will always fluctuate, since flour can be of different humidity, differ in the degree of grinding and the level of gluten, and other indicators, which inevitably affects its ability to bind to the liquid mixture in the dough. Since it is impossible to do a laboratory test at home to determine all the parameters and indicators of flour, we recommend acting on the principle of "flour in water", that is, take liquids exactly according to the recipe, and add flour to the liquid component not all at once, but in parts, achieving the desired consistency (while flour may take a little more or on the contrary, less than in the recipe). Thanks to this technique, the proportions of the ingredients are more accurately preserved and the quality of the dough is not lost.
