Step-by-step cooking
Step 1:
Prepare the ingredients for the cake. Let's start by kneading the dough on rye flour. Melt the butter in the microwave or on the stove, let it cool to room temperature.
Step 2:
In a deep bowl, drive in a chicken egg, pour in melted butter, add sugar, salt and sour cream. With a whisk or mixer, mix the ingredients until a homogeneous mixture is obtained.
Step 3:
Pour rye flour, sifted and combined with baking powder, add flour in small parts, mixing each time. Knead the dough first with a spoon in a bowl, then with your hands, adding flour if necessary. Flour may need more or less than indicated in the recipe, focus on the consistency.
Step 4:
The dough should be dense, but not clogged with flour, it will stick to your hands a little, so you need to let it rest in the cold. We wrap it with cling film and put it in the refrigerator for half an hour.
Step 5:
In the meantime, we will make a pie filling from cottage cheese and fresh herbs. As greens, you will use a bunch of parsley, a bunch of dill, a couple of leaves of cilantro, basil and other if desired. The greens are well washed, dried, finely chopped with a knife, put in a bowl.
Step 6:
Add cottage cheese. Cottage cheese is better to use natural and necessarily fresh, but we choose the fat content of the product to taste. Add salt and ground black pepper to taste.
Step 7:
Mix the ingredients with a spoon or, if desired, punch with a blender until smooth.
Step 8:
Take the finished dough out of the refrigerator. We divide it into two parts. We roll out most of it into a thin layer.
Step 9:
We spread the dough in a greased baking dish with vegetable oil, forming pie sides from the edges of the dough.
Step 10:
We spread the filling of cottage cheese and greens on top.
Step 11:
Roll out the remaining dough into a circle according to the size of the mold and cover the filling with it. Beautifully pinch the edges of the pie, in the center we make a hole for steam to escape. Grease the pie with a beaten chicken egg on top and make a few punctures with a fork so that the pie does not start cracking during baking.
Step 12:
Preheat the oven to 180 degrees, bake the pie for about 50 minutes, until a golden crust forms. We take the pie out of the oven, let it cool down a little and serve it to the table with tea, coffee or cocoa. Have a nice tea party!
