Step 1:

We take the margarine and eggs out of the refrigerator in advance so that the margarine softens and the eggs are warm. Unlike the preparation of ordinary dough, we start working with flour. Sift it into a bowl, add vanilla.

We drive in two eggs, if the eggs are large, one will be enough.
Step 4:
Put the soft margarine cut into pieces. If there is no time to wait for margarine to soften at room temperature, you can grate it cold. The dough will not be worse from this. Add half a teaspoon of soda, slaked with vinegar.
Step 5:
Knead the dough. The second secret of a successful shortbread dough, it can not be kneaded for a long time, otherwise it will be tight and not tasty. Wrap the dough in plastic wrap and put it in the refrigerator for half an hour. Meanwhile, prepare your favorite jam, for example, plum jam. It is better to take a homogeneous consistency and thicker.
Step 6:
Divide the finished dough into four parts. Each of them is rolled out into a layer about 0.5 cm thick. It is not necessary to get thicker, during baking the dough rises well. The shape of the cake can be made any desired, round or square.
Step 7:
Preheat the oven to 200 degrees. Bake each cake for about 10 minutes, until golden.
Step 8:
We take out the cakes, let them cool down a little, cut off the uneven edges of the cake, the remains will be useful to us for crumbs for sprinkling. The remains of the dough are ground into crumbs, this can be done simply with your hands, the dough is very soft or with a rolling pin or a blender. In a coffee grinder, you should not do this, otherwise the crumb will be fine as flour, and it tastes better when it is large.
Step 9:
Form the cake. Each cake is smeared with jam on one side, covering the top with the next cake. The top cake and sides are also lubricated with jam. If the jam is thick, it is better to form a cake while the cakes are warm, then the jam will melt a little and soak the dough well.
Step 10:
Sprinkle the cake with crumbs and put it in the refrigerator for impregnation. Ideally, leave the cake overnight in the refrigerator. Then it will be much tastier and juicier.
Step 11:
