No-Bake Plombir Ice Cream Cake
Delicious, delicate, and made from the most ordinary ingredients! This no-bake plombir (rich vanilla ice cream) cake comes together quickly and easily, simple enough for even a first-time baker. Crumbly shortbread layers and a silky cream filling complement each other beautifully, and the cake turns out moderately sweet and moist.

Step 1:
How do you make a no-bake plombir cake? Start with the layers. The "layers" here are really shortbread crumbs toasted in a skillet, no oven needed. First take the butter out of the fridge and let it soften. Use good-quality, natural butter with no additives. Put the softened butter in a bowl and add the sugar and sifted flour.

Rub the mixture together with your hands into small shortbread crumbs.

Pour a portion of the crumbs into a dry skillet, spread them out, and toast over medium heat until lightly golden, stirring with a spatula. Work in small batches so the crumbs toast quickly. Toast all the dough this way and tip the finished crumbs into one bowl. Your shortbread crumbs are ready.

Next, make the plombir cream. In a metal saucepan, whisk together the eggs, cornstarch, sugar, and a pinch of vanilla until smooth. Add the sour cream and whisk again (or use a mixer). Set the pan over low heat and cook, stirring constantly with a spoon, until thickened.

Take the pan off the heat, let the cream cool a little, and add the soft butter cut into pieces. Beat with a mixer until smooth and fluffy. Chill the cream in the refrigerator.

Assemble the cake, ideally using a cake ring lined with plastic wrap. Set aside about 4 tablespoons of cream right away for decorating. Spread a few spoonfuls of crumbs as the first layer in the bottom and level it.

Spread a couple of tablespoons of cream on top, smoothing it gently over the surface. Continue alternating crumbs and cream until you've used them all up.

Once the cake is fully assembled, refrigerate it in the ring for 8 hours to soak and set.

Then remove the ring and carefully peel away the wrap. Fill a piping bag with the chilled reserved cream and pipe little flowers over the cake. Refrigerate another half hour, then serve. Enjoy with a cup of tea!
