The main advantage of all ice cream cake recipes is that their flavor strongly resembles the beloved ice cream of the same name. However, the cake layers can be very different: shortbread, sponge, puff pastry, custard, even honey. Because the main flavor of the cake comes from the cream, which shares the same name. And the home pastry chef's task is to make sure the flavor of the layers does not overpower the cream, but only sets it off.
One of the classic ways of making it today is with shortbread. The dough is kneaded from flour, butter, sour cream, baking soda, and salt. Sugar is not part of the original recipe, but you can add a little to taste. This dough does not draw attention away from the buttercream. The layers are baked separately and thin. The second method for a baked version: one cake layer is baked (the mix of ingredients can vary, but ideally it should be a sponge), which is cut into small cubes. Then all the cubes are gathered together into a kind of dome and everything is thoroughly spread with cream. In its finished form, the cake looks like a hemisphere of ice cream, which lives up to its name.
